Whats Oxidation Got To Do With It

Leaf Tea Buying Tips

Its important to know that all teawhite, green, oolong, black and even pu-erhcomes from the same Camellia sinensis plant, an evergreen bush indigenous to both China and India. Hundreds of cultivars and hybrids have evolved from the Camellia sinensis plant over time, each thriving in diverse geographical areas of the world. But its ultimately the variety of tea plant and how the plants leaves are processed that defines the final type of tea that ends up in your teacup.

One of the biggest differentiators in how various teas are processed is oxidationthat is, how long tea leaves are allowed to be exposed to oxygen once theyve been harvested. The longer tea leaves are exposed to oxygen, the darker the leaves become and the deeper the flavor profile thats developed. During processing, tea masters use many different methods to create and control oxidation, including rolling, shaping or crushing the leaves to speed up oxidation, and steaming, firing or roasting the leaves to stop it.

White Tea: Green Bud Withering Drying

Our white tea is neither rolled nor fired, so it is essentially non-oxidized and it is the least processed. Instead of being exposed to an artificial heat, the leaves are simply allowed to wither and dry in a carefully controlled environment, which results in the most delicate, fresh-from-the-garden tasting tea.

What Are White Teas

Perhaps the lesser-known member of the tea family behind its more extroverted cousins, white tea is minimally processed and is the least oxidised tea made from the freshest leaves and unopened buds of the camellia sinensis plant.

With white tea, less is definitely more. White tea has a pure, unsullied essence, a raw and natural beauty. Because it is picked so young and fresh and undergoes the least processing of black, green, pu-erh and oolong teas, white teas claim to fame is its smooth, delicate flavour and natural goodness.

White tea should be brewed at a relatively low temperature in order to maintain the tea’s fresh characteristics. Use clean, pure water that is not yet boiling, ideally 175 to 190 F. Note that water boils at 212 F, so the water should be hot but not quite simmering. Most white teas will need to steep for as little as one minute or up to five minutes. Some varieties will become astringent and bitter if left to steep for too long, or brewed with water that’s too hot.

The amount of tea needed will depend on the leavesif the mixture is largely compact buds, then as little as a teaspoon for an eight-ounce cup will suffice. If the tea is made up of open, light-weight leaves, use closer to a tablespoon per cup. Taste the tea before adding any sugar or other ingredientsit likely won’t need it.

Caffeine Content In White Tea

White tea is generally thought to be lower in caffeine than green or black tea. The original Fujian white tea plant native to China has been shown to be lower in caffeine than other tea plants. But other varieties of tea plants around the world that are being cultivated for white tea may not be as low in caffeine. Some studies even show that certain white teas may contain as much or more caffeine as green or black teas, depending on where they were cultivated and how they were processed.

Ultimately, the caffeine content in any beverage brewed from a caffeinated plant varies depending on many factors, including where the plant was cultivated, how it was processed and the way it was ultimately brewed for your cup. If you are monitoring your caffeine intake, you should always ask your tea vendor for specific caffeine information for the tea youre purchasing.

The Unique Qualities Of White Tea

The taste of white tea is exceptionally mild, with a light, almost honey-like sweetness, and a dilute finish. The brewed tea is not white, but a pale-yellow colour. White tea is universally revered by tea connoisseurs, who appreciate the subtle nuances.

Researchers say that White Tea has some of the highest antioxidant levels of any teas. Made from the unopened buds of the tea plant, white tea derives its name from the silvery-white hairs that adorn each bud and give the dried leaves their white appearance.

Loose White Tea Versus Tea Cakes

While both loose leaf white tea and compressed white tea cakes are made from the same ingredients, there are a few important differences:

Color: loose white teas are often silver green while compressed cakes from the same material have a slightly brownish appearance. This is related to a difference in processing thats discussed next.

Processing: Loose white tea consists of dry leaves as a result of natural withering. Cakes have an additional step of steaming to make the leaves soft, followed compression of the leaves to turn them into cakes.

Storage & aging: Given the additional processing steps, cakes are more suitable for long term storage and aging so that they acquire a rich flavor, while loose leaf teas are great for fresh consumption. Compression also makes sure that the leaves are less fragile and less easy to break.

Taste & aroma: Given that the leaves are fresh and made from the same raw material, the flavor and aroma difference when comparing a cake with loose leaves is minimal. However, over time cakes will acquire a more mellow and sweet flavor with a thick texture, while loose white tea is more fresh and flowery. In addition, with loose leaves the flavor comes out in the earlier steeps, while the taste from cakes are drawn out in later steeps. Thus, white tea cakes tend to last for more steeps.

We can highly recommend our loose leaf white teas and cakes for optimal flavor, aroma and health benefits, instead of tea bags containing low quality dust.

What Is White Tea

How To Make The Perfect White Pine Tea

White tea tends to hide its bright white light under a bushel, seeming to pale in comparison to its more famous and outgoing tea-siblings. But despite its shy character white tea is an important member of the family.

White tea made from the buds and the freshest leaves of the camellia sinensis plant bears fine, silvery-white hairs, which is how it gets its name.

When you think of white tea you should think of unsullied tea as beautiful and pure as the proverbial driven snow. In fact, fresh and appealing white tea is the least processed and least oxidised of all its siblings – black, green, pu-erh and oolong teas which is how it retains its delicate tones and health-boosting properties.

Gregarious green tea might boast an abundance of good-for-you properties and claim to be top of the health-giving tea chain, but the benefits of white tea compete strongly with green tea and could almost earn it a position alongside our range of Wellness Teas.

What Is The Best Time To Drink White Tea

White tea contains caffeine, so its best avoided later in the afternoon or evening. If you are not sensitive to caffeine and its not affecting your sleep, you can drink white tea throughout the day. Otherwise, drink it in the morning and early afternoon. Studies showed that white tea may have more caffeine than Chinese sencha or Darjeeling black tea. 3-5 cups of tea per day should cause no side effects for most people and provide all the benefits.

How To Make White Tea

In keeping with its shy personality, white tea isnt as comfortable diving into boiling water as black tea. The ideal brewing temperature for a cup of luscious white tea is 80°C where it wont brood but happily brew for about five minutes.

We dont suggest sullying white teas purely innocent qualities with anything else. Once your scoop of white tea has brewed in the teapot, tea-maker or teacup with infuser, its ready to enjoy.

  • Traditional vs. Modern. As white tea has grown in popularity, so has the number of suppliers. This means that there are more varieties around now and not all of these products are considered traditional.

If you know of a better place to buy white tea than the ones I mentioned, please let me know that as well.

A Carefully Crafted Tea

White tea is harvested from the Camellia sinensis plant, but unlike its green and black tea cousins, white tea is taken from carefully chosen plants that have been matured for several years before their first harvest. The silver buds and young leaves are harvested in early spring, and are then slow-dried to prepare them. White tea leaves are the least processed of all teas they are naturally dried, lightly rolled if at all, and are less oxidized than a black tea or oolong tea. The result of this careful selecting is an ivory-colored tea with a pleasing aroma and delicate, lightly sweet flavor that stimulates the senses.
