What Is Chinese Dragon Tea

First things first, this tea is actually known as Longjing tea.

The direct translation of this is dragon well tea.

This tea does go by many names, however. It is often referred to as Lung Ching Dragon Well too.

Also, dragon well tea that is sourced in the West Lake district is known as West Lake Dragon Well tea. ;

It is a green tea one of Chinas most famous.

The tea leaves can be identified by their bright green color and long shape.

Dragon well tea has a delicate aroma and a mellow taste.

Where Is Longjin Tea Grown

The original Longjin tea bushes are in eastern China West Lake in Hangzhou.

Hangzhou is the capital of the Zhejiang province.

Now, Longjin is grown throughout the Zhejiang province.

However, one of the highest grades Xihu Longjin is only grown in the West Lake region.

Once, the different varieties of Longjin tea were graded based on their growing region in Hangzhou.

These days, most of these lines have been blurred.

Now, there are three main tea varieties Shi Feng , Xihu , and Mejiawu.

What Is Dragon Well Tea

Dragon Well is one of China’s 10 most famous teas.;It’s a pan-baked tea over hot woks. The leaves are flattened during the heating process. To be authentic, Longjing, which literally translates as dragon well, must be grown in China’s Zhejiang province. Much like champagne, if it is grown anywhere else, it is not authentic.

Long Jing is a spring tea picked in early April, following Qing Ming, the traditional Chinese holiday for paying respects to their ancestors. Qing Ming falls;fifteen days after the Spring Equinox, which is usually the first week in April.

In Chinese tea culture, this day divides the fresh green tea by their picking dates. Any tea picked before this date is called Pre Qing Ming and is very expensive. Pre Qing Ming tea is also called Imperial Long Jing.

What Is Longjing Tea

Longjing tea is a variety of green tea that is commonly called Dragon Well tea and is prepared by hand by heating in large pans or woks. This type of green tea is roasted soon after being picked, which stops the oxidation process, similar to most other green tea varieties. By stopping the oxidation process, this type of tea is able to retain a very high concentration of antioxidants, catechins, and other polyphenolic compounds. This highly sought-after tea has a surprisingly high level of caffeine, almost the same as a cup of coffee, but there are other active ingredients that can simultaneously soothe the body. This specialty tea has a mildly;astringent taste, similar to other green teas, but it is light yellow in color, rather than the yellow-green color of most other similar teas.

How Do You Brew Dragon Well Green Tea

Use 6 grams of tea leaf for a 30-ounce teapotabout 4 grams for a 16-ounce cup and 2 grams for an 8-ounce cup. Use a water temperature of;185° F .

  • Pour water over tea leaves in a circular motion so the heat of the water will be even over the tea leaves. Tea leaves can be reused;multiple times.
  • First;infusion: 2-3 minutes. Second;infusion 3- 5 minutes. Subsequent infusions can be longer depending on how strong;you like your tea.

  • If you want to make it stronger wait until the color is richer. If your pot has a filter, you can remove it when your tea is strong enough for you.

  • You can drink straight from your cup after two minutes when all the leaves sink to the bottom of your cup.
  • Leave about one-fifth of your tea in your cup or pot before you make your next infusion. You can reuse the same serving of tea leaves at least three-four times.

More Information About Longjing Tea

Dragon Well comes from the area around Longjing Village in Hangzhou, Zhejiang Province, China. Even today, it is mostly hand-picked and processed and is known as one of the highest quality green teas available. It holds the China Famous Tea title.

Chinese green tea leaves are generally roasted after after theyve been picked in order to stop oxidation , and Longjing tea leaves are no exception. It is the halting of oxidation before it can occur that makes a tea a green tea.

Longjing has a mellow and fruity flavor with definite vegetal tones that remind of spinach or fresh grass. It also has slight hints of cream and chestnut.

Growing Conditions

The region of Zhejiang province where Dragon Well leaves are grown is mountainous, but the climate is mild. It gets a lot of rain and is covered in fog all year.

This means a lack of sunlight, which essentially makes Dragon Well a shade grown tea, like Gyokuro or Matcha. As such, it contains higher levels of theanine and with that, more catechins, more nutrients and more caffeine.

The highest-quality and most prized Longjing teas come from the West Lake area, but the tea is produced in numerous areas in Zhejiang. It is also produced in other parts of China and Taiwan. Growers there use the same techniques, but their teas are not authentic Dragon Well.

Processing

Longjing leaves are picked early in the spring. The highest quality varieties are harvested before the Qingming festival on April 5th. Only the young buds are used.

How To Make Dragon Well Tea

Use a clear glass teacup to see the gradual color change when the tea begins to dissolve in the water.

  • Add 2 grams of dragon well tea leaves in a tea holder.
  • Fill 1/3 of the glass teacup with water and then add the tea leaves.
  • Shake well and pour water into the teacup almost near to the brim.
  • Pour the tea liquid into a fair cup after 3 minutes, and have the tea in a separate cup.

Note: The temperature of the water should be maintained between 80°C and 85°C.
