The best way to make cold brew tea isnt by heating the water and letting the tea steep for a few hours until it cools. Neither is it to brew hot tea normally and then wait for it to cool.

In the first case, using hot water and letting the tea leaves infuse for several hours until it becomes cool on its own leads to an overextracted tea. This is often a bitter, astringent tea, and not tasty at all.

In the second case, waiting for a cup of hot tea to cool wont make it very tasty. This is because tea extracted with hot water doesnt taste as good cold. You can drink it, yes, but youll notice somethings off about it.

The best way to make cold brewed tea is to apply cold water from the get-go. I know it sounds a bit odd, especially if youre used to hot brewed tea.

You first question would probably is it works. Yes, it does work, But its a very slow process.

The reason hot tea takes only a few minutes is because heat makes the flavors and caffeine release much quicker. But this can often lead to overextraction, and thats never a good taste.

Cold extraction, which is essentially what were doing when cold brewing tea, is much slower and releases the chemical compounds in anything differently.

It does take longer, and you have to plan it in advance. If you want cold brewed tea now, you have to take out the pitcher you set to steep yesterday.

How To Make Iced Tea

Now that you have your ingredients the process is very simple.

In a large pot bring 10 cups of water to a rolling boil.

Turn off the heat and toss in 10 teabags.

Basically, use one teabag per cup of water. So, you can adjust your quantity to make however much iced tea that you want.

Let the teabags steep in the hot water for about 15 minutes.

While the water is still hot, stir in your sweetener. The hot water will help it to dissolve quickly.

I add in the sugar while the teabags are still steeping.

Meanwhile, add a slice or two of fruit to 6;16-oz mason jars.

After 15 minutes of steeping , squeeze out the teabags and throw them away.

Pour the warm tea equally over the fruit in the mason jars. Each jar should be about three-quarters full, so you have room to add ice when you serve.

Close each jar with the lid or cover your pitcher and place them in the refrigerator for several hours or overnight to cool down.

Is Your Homemade Iced Tea Cloudy

Not to worry.

The first time that I made this homemade iced tea recipe, I was surprised to find that the tea had become cloudy by the next morning.

I read on CooksIllustrated.com that this is the cause:

Cloudiness in tea is caused by caffeine and tannins bonding with each other when tea is refrigerated or iced.

Apparently, the cloudiness is tied to the temperature at which you brew the tea.

The hotter the brewing temperature, the cloudier the tea.

So, if you steep your tea in room temperature water for several hours, it will stay clear but will likely be weaker in taste.

In this recipe we bring the water to a rolling boil so it gets pretty hot.

This means the homemade iced tea will become cloudy when you refrigerate it.

The good new is that it is normal and it doesn’t affect the taste.

What Tea Should I Use For Making Iced Tea

For traditional iced tea, you want to use black tea.; You can choose any brand that you like, but remember, the better the quality of the tea you use, the better the flavor will be for your iced tea.

I love using earl grey tea.; Earl Grey is a black tea that is infused with bergamot oil which has a light, citrus flavor that makes for a delicious iced tea.

Also, keep in mind that you can use this method to make any type of iced tea you enjoy.; Some of my favorites are green tea, lemon verbena tea, chamomile tea, peach tea, and/or mint.

How Much Tea To Use For Cold Brewed Tea

Okay, now lets do the math. If you were to use a standard of 2 teaspoons of green tea for 250 ml/8.5 oz of brew, then lets multiply all of that by how large your pitcher is.

If youre using a 1 liter/ 33.8 oz pitcher, then youd assume you need 8 teaspoons of tea leaves for your cold brewed tea. This would be the most logical approach.

But, remember that tea reacts much more slowly to cold water. So youll have a different product if you use as much tea as you would for hot brewed tea.

I recommend using 12 teaspoons of tea leaves for 1 liter/33.8 oz, and diluting the brew with additional water if it ends up too strong for you. If its just fine, then great, youve found your ratio of leaves to water.

I short, using 3 teaspoons for every 250 ml/8.5 oz of water will guarantee a tea that will match your hot brew. Serving the tea over ice cubes means youll have to brew it even stronger than this.

If youre brewing with a gallon of water, youll need 45 teaspoons of loose leaf tea. Thats 15 tablespoons, and easier to keep track of.

We each like our tea stronger or lighter, and I have no idea how you like yours.

Keep in mind that I take my tea quite strong and these measurements reflect that. So if you know you like lighter tea then feel free to add less tea than I mentioned here.

The same pleasant chemicals extracted from steeping tea leaves in hot water are not extracted in cold water. To combat this extraction problem, the amount of tea leaves used is often increased, and the steep time is drastically altered.

Hot brewed tea pulls out the tannins, which are the bitter flavors in tea. With cold brewed, you have a perfectly refreshing, super-smooth tea for slow summer sipping. It isnt bitter at all.

Cold-brew tea produces a different flavor of tea because it pulls out fewer catechins and tannins. Tea tannins are typically substances that can make the tea taste bitter. It is not clear yet how the caffeine content is altered.

For iced tea that you can drink right away, choose this method. It starts out just like making hot tea, but the difference is that the hot brew will be twice as strong. Add an equal amount of cold water to this hot tea concentrate to cool it down, then serve immediately over ice or chill in the refrigerator until ready to drink.
