This time, I used a tea leaf mill, which I bought at a Japanese grocery store, Uwajimaya, many years ago. This is what it looks like :

Premium Grade Matcha Is The First Flavorful Grade

This is the grade of Matcha most coffee and tea houses use for their actual cups of Matcha. More expensive than food grade, less expensive than ceremonial .

When whipped, the Matcha should be thick and frothy, as opposed to culinary grade where you might not always get the most foam/crema from the powder.

The texture is very different, as it should be noticeable softer, with no grit. The color is already bright green, and the taste is different as well.

You’ll notice the umami and a bit of sweetness as an aftertaste, but it’s not as pronounced as ceremonial grade.

Still a large improvement over culinary grade.

Add Warm Water & Form A Paste

How to use Matcha Green tea Powder

With your matcha powder ready to go, its now time to fill your matcha bowl with 2 oz of warm water from a kettle and use a traditional bamboo whisk to whisk your matcha into a smooth, clump-free paste.

Water temperature is one of the most important variables in steeping a consistently bright and tasty cup of matcha.Keep it to a warm 75-85°C so as to not burn your matcha powder and give it a bitter taste. Cooler water temp also means your matcha will froth up to that eye-catching jade colour. Use cooler temp 75°C for traditional matcha and for flavoured matcha.

Dont have a thermometer?Let your boiled kettle sit for 7-10 minutes before using.

    Latte Ingredients And Notes

Matcha Powder: When you buy matcha powder there are two types youll find. Ones that include added sugars and other ingredients, and ones that are purely matcha powder. Get the type that is pure matcha powder, no extra stuff! You can find it online, Whole Foods, or Asian markets.

Dairy-Free Milk: I used unsweetened almond milk for my recipe, but I also recommend oat milk, soy milk, or a light coconut milk. Oat milk and soy milk will allow the flavor of the matcha to shine through. Whereas youll taste an undertone of coconut if you choose to go with coconut milk.

Maple Syrup: You can add more or less than the one tablespoon of maple syrup in the recipe. However, I recommend starting with one, tasting, and adding more if you think it needs more sweetness.

Vanilla Extract: The vanilla extract gives a slight hint of vanilla flavor that youll find in the Starbucks version.

Ceremonial Grade Is The Best Matcha And Most Expensive

Ceremonial grade Matcha is the most expensive grade there is, and also the best. It ends up as a cup of thick, creamy, uniform Matcha with a nice and smooth finish.

There should be no bitterness at all, and the sweetness should be definitely there. It’s more of a sweetness like milk or butter, the kind hat makes you want to have another cup.

The froth should be very thick, and the color of the drink and the powder as green as your eyes can bear it.

To be honest the difference between premium and ceremonial is often a bit blurry. You might find something of a weaker quality labeled as ceremonial, when in fact it’s a premium.

But really all 3 grades are more of a scale, with some batches being closer to a culinary but not really there, or some nearly ceremonial.

Matcha is made from the Camellia Sinensis plant. Matcha tea leaves are grown under shade for three weeks, which causes the plant to overproduce chlorophyll in an attempt to compensate for the minimal sun. The shade also increases the amino acid l theanine in the plant, which is thought to be responsible for the drink’s profound unique flavor. It is then harvested.
