I made donut batch after donut batch, adding and subtracting ingredients (with milk, without milk, with loads of strong coffee, with hardly any coffee, with cream, with less spice, with more spice, using a coffee simple syrup, then using a pumpkin spice simple syrup, using both, etc. etc. etc. until I could get as close to the Pumpkin Spice Latte flavor I loved and wanted in this donut.

Note to self: My husband LOVES the Dunkin Donuts vanilla chai latte. Like literally obsessed with it. I remember when we first started talking he used to call me on his way to work and every morning it was the same routinea cup of this deliciousness. It was that moment when I decided that I would try and recreate it at home so I could make his a cup of chai every morning. Now this was the closest Ive come across to the chai spice mix. I adapted the recipe from JoyFilledDays.com, and I personally add an extra tablespoon of french vanilla creamer and a little more sugar every time I make it to give it more of a vanilla-y taste.
I also use a coffee/spice grinder to blend the mixture together to make it into a fine powder. I feel like it dissolves better into the milk. After frothing and whisking I also strain it into a coffee cup to get out any little bits of the spices that didnt dissolve fully. This is the blender I use, its from the brand capresso, and while I like it and it does its job its a little difficult to clean since the part where the spices are doesnt come off. But I do like that its small and compact. Living in an apartment cupboard space is essential and I hate clutter. ¯\__/¯
