The obvious way is to use a tea blend and steep it like you would a normal herbal tea. This is likely to give you the most concentrated dose and, is probably the healthiest way to consume it.

Dont add milk while Im not aware of anyone testing this with blue tea, some research suggests that milk stops you absorbing as many antioxidants from food and drink ;

;Interestingly though, adding lemon juice to green tea will increase the antioxidants you absorb. And again, while I dont know of similar studies with butterfly pea flower tea, this could be one time when playing with your food has extra benefits. ;

You can add whipped sugar on top to make blue Dalgona Coffee but that might negate some of the health benefits if they do exist . Ditto for many of the pretty pea flower syrup-based drinks you see looking pretty on social media.

The main ingredient of blue tea is a Thai plant called butterfly pea flower .

Its very commonly used in Southeast Asia and despite the fact that Ive been to Thailand and Malaysia about 15 times, Id never come across it but apparently, its really common over there and traditionally used as a food colouring turn desserts blue or purple.

Its also used traditionally as a medicine, where its claimed to enhance memory, beat stress, improve mood and calm us down.;

Most of these benefits come from the fact that, like most blue/purple foods, butterfly flower pea tea is packed with antioxidants. And it seems that these trigger some potentially exciting health benefit.

For starters, a study on men found that an extract of butterfly power tea taken after meals raised antioxidant levels and helped lower levels of blood sugar produced after eating.

Another trial suggested it might help reduce histamine levels lowering risk of allergy and its also been shown to help reduce inflammation associated with arthritis.

Lastly, it might help neutralise the bacteria that leads to tooth decay which is handy.

Butterfly pea flowers are rich in anthocyanins, which are antioxidants and natural pigments that give some plants a bluish purple-red color. Anthocyanins change shades depending on the acidity of their environment, according to an article in the journal Food & Nutrition Research. When in water, which typically has a pH just above neutral, anthocyanins look blue. If you add an acid to the mixture, the pH decreases, causing the anthocyanins to develop a reddish tint and the overall mixture to appear purple. So, when you add acid to butterfly pea tea, it transforms from bright blue to a lovely purple, says Choe. The more acid you add, the more reddish it becomes, creating a violet-pink shade. Pretty cool, right?

Brewing a cup of butterfly pea flower tea, made from a Southeast Asian flower, is like seeing a glow stick turn from a boring translucent-gray tube into a glimmering neon cylinder for the first time. Just add water and it’s a deep midnight-cobalt blue. Squeeze in lemon, and it transforms into a rich violet.

We first knew about the tea when we tried the psychedelic Mood Ring Cocktail at Mission Chinese Food in New York. But it wasn’t until pastry chef and inventor of the Cronut, Dominique Ansel, described tasting it in his Grub Street diet that we were interested in the potentially mainstream appeal of the flower and its Lisa Frank-ian color palette.

We knew our local supermarkets didn’t have it, so we went where we always do: the Internet. And we ordered some to take the technicolor liquid for a spin. The package we ordered from BlueChai combines dried butterfly pea flowers with dried lemongrass, and the package recommends steeping five teaspoons into a mug with 250mL of boiling water for between four and 15 minutes. After around five, this writer’s tea mug looked more like an opaque navy-indigo pool worth dunking knotted-off shirts into for impromptu tie dye than something that should be ingested.
