The Experiment: Best Green Tea For Cold Brew Green Tea

When we shared How to Cold Brew Hojicha, we realized we never tested a variety of green tea leaves to see which one was our favorite. Since our family loves drinking green tea, we looked forward to the experiment.

Since were in the US, we purchased all the green teas either in our local Japanese supermarket or online . The tea leaves we tried are:

  • Gyukuro Maeda-en
  • Sencha organic, Okumidori, Kagoshima, Kyushu
  • Sencha Yamamotoyama, Kagoshima, Kyushu
  • Sencha Hosen from Ippodo Tea Shop
  • Bancha organic, Shizuoka prefecture
  • For our taste test, we excluded any tea that has matcha powder added as it covers up the true flavors of green tea leaves.

    What Youll Need To Prepare A Single Serving Cold Brew Tea

    The ingredients needed for the recipe are the following:

    • a tea bag, it can be any flavor you like
    • cold filtered water, 6 fluid ounces

    Utensils needed: a mason jar and a spoon.

    The instructions would be the following:

  • If your tea bag comes with a thread, remove it.
  • Place tea bag in the mason jar.
  • Pour in the cold water and stir.
  • Wait 2 minutes, cover and refrigerate. Steep from 5 to 12 hours depending on how strong you want your tea.
  • Serve and enjoy as is or sweeten to your liking!
  • Note: You can use two tea bags if you like stronger tea. You can also prepare it the night before and let it steep in the refrigerator overnight.

    For the Green Tea, I like to use the Sencha Japanese type because I noticed that it gives a stronger green tea flavor. I used this in a sweet green smoothie recipe!

    How To Make Hot Spiced Green Tea

    Heres how you can make this variety of green tea. To make four cups of this beverage, take four tea bags, a couple of cinnamon sticks, four to five cardamoms , two tablespoons of honey and half a teaspoon of lemon zest. Put the tea bags and all the other ingredients in a warm pot and pour about 800 ml of boiled water, which has been cooled a bit . Steep for five minutes or so. Strain the tea in four cups, stirring in honey. Serve hot.

    Tip:You can add a little bit of chopped ginger in the teapot as well.

    For the most accurate results, you can use a tea kettle with a built in temperature gauge or a thermometer. Alternatively, you can boil water on the stovetop, remove from heat and allow the hot water to sit for about 45 to 60 seconds for the perfect cup.

    If you are at sea level, you may need to let the water cool a bit longer. That’s because the boiling point of water is 212 F at sea level and only 200.1 F at 6,600 feet. Again, you may prefer to use a thermometer for precise results otherwise, be patient and tweak your green tea recipe to suit your situation.

    Here are the flavor profiles of each tea:

    1. Gyukuro tea was very delicate and had a light aroma. The flavors were mellow and floral, not much of the bottled green tea taste. The texture was water-like with a clean finish. 2. Tea leaves picked 88 days smelled like bottled green tea. It had a strong tea flavor, slightly tart, and fragrant finish. This was our favorite. 3. Shincha had a very light aroma. The tea tasted medicinal and herby, slightly bitter with a tart finish. 4. Ippodo Hosen tea had a light aroma and a very refined green tea flavor. It had a slightly tart finish but tasted really clean. This was our second favorite. 5. Bancha was quite horrible. There was no green tea smell and the aroma reminded us of burnt leaves. The drink didnt taste like green tea at all and left our mouth dry.

    So what did we learn from our experiment? Our preferred green tea for the cold brew method is Hachiju Hachiya Sencha that has had time to mature. Gyukuro and Shincha are both too light and lacked the deep green tea flavor profile. Bancha was quite awful and we wouldnt be able to tell it was even green tea.
