3 Ingredient Green Tea (Matcha) Ice Cream Recipe

Ive tasted many different brands and my personal favorite is Oi-Ocha by Ito-En.

The taste is milder, almost sweet even though it contains zero sugar . There is no bitterness and it dissolves in the water entirely. Its more expensive than some other brands but thats the one I always go for.

Luckily, its sold in most Japanese supermarkets across the US and on too.

There is another brand of matcha powder that I like also made by Ito-En called Easily Catechin . This powder is much more potent and bitter and doesnt entirely dissolve. It tastes much closer to steeped green tea which is why Ive chosen to use this one for this recipe, in order to inject as much green tea flavor as possible.

  • 2 tablespoons matcha powder, mixed with about 4 tablespoons water

Equipment & Matcha Used To Make This Matcha Ice Cream

  • Put the bowl of your ice cream maker in the freezer.
  • Whisk the yolks and sugar together until pale yellow.
  • Warm the milk and vanilla until it just lightly simmers.
  • Temper the egg/sugar mixture with the milk/vanilla mixture.
  • Return to the sauce pan and cook until thickened, stirring slowly and constantly. It should get to 170F.
  • Remove from heat. Sift and whisk or blend the matcha into the mixture. Add the cream. Chill in the refrigerator overnight.
  • The next day, add your chilled ice cream to the ice cream maker. Churn until it is the thickness of soft serve ice cream, 18-22 minutes.
  • Transfer to a container you can freeze, cover with parchment paper , and freeze at least 4 hours.

How To Make Matcha Ice Cream

Amazing Japanese Green Tea Ice Cream

Matcha is ground so finely that it tends to form clumps that are very difficult to dissolve in a liquid. Thats why you always want to sift it through a tea strainer before using it.

Then you want to add the sweetened condensed milk and use a spatula or whisk to mix the two ingredients until there are no visible lumps.

Add the cream to the bowl and mix everything together. Be sure to scrape down the sides and bottom of the bowl with a spatula.

Once the Matcha Ice Cream mixture is uniform in color, use a whisk or egg beater to whip the cream until its about the consistency of thick pancake batter. It should still be pourable, but you should be able to see ripples run through the cream if you drag the whisk through it. Be careful not to turn it into whipped cream or the ice cream will end up fluffy like cheap ice cream.

Transfer the Green Tea Ice Cream base into a container with a lid and put the container in the freezer overnight.

To serve the Matcha Ice Cream, remove the container from the freezer about five minutes before you plan to eat it so it can soften a little. This will make it easier to scoop.

    The answer to this question is debatable.

    Ive read on some sites that it can only keep for a few days before the texture crystalizes. But Ive also come across comments from home cooks who say they had no problem keeping their ice cream in the freezer for up to a month.

    I guess it depends on what storage container you use and what type of freezer you have. We have a pretty small freezer and because of that have trouble keeping ice cream fresh for a long time . So for us I would say no more than 2 weeks before the texture starts to become unpleasant.

    But thats something we dont really have to worry about since it takes us only 2 days to go through an entire container of matcha ice cream!
