These flaws may not matter for brewing at home but can be potentially frustrating for high-volume service. Despite these limitations, the merits of the Bonavita far outweigh its flaws.

Out of the 13 kettles we tested, six were variable temperature kettles, meaning they could be set to a range of temperatures lower than waters boiling point. If you make immersion-style coffee or are into brewing tea, youll want a variable temperature kettle.
Variable temperature kettles are often more expensive than non-variable models. But, the investment can be well worth it: in addition to heating water to various temperatures, they also include a keep-warm function that holds a set temperature for anywhere from 20 minutes to an hour. When we tested the keep-warm function of these variable temperature kettles, all of them were within two degrees of 200°F at 15 and 30 minuteswith the exception of a model from Zwilling that was 206°F at 30 minutes.
And when we tested these kettles for accuracy , the best kettles were within two degrees of all of these temperatures. In fact, the Fellow was only ever one-degree off at the most. The lower-performing kettles were four to seven degrees off.
How We Test Electric Kettles
To test our latest batch of eight electric kettles, I used a 4-channel K thermometer SD logger. The thermocouple measured two things: how quickly each kettle boiled four cups of water — and how well each model with a hold-temperature function held the water temperature over a 10-minute period.
For the boil test, I started with cold tap water and watched the thermocouple display until the sensor tracking the temperature inside each kettle reached 209 degrees Fahrenheit. Yes, water boils at 212 degrees F, but we use 209 because the boiling point for water can vary based on variables such as altitude or barometric pressure. In most of our testing areas, 209 F is a target temp that should not be affected by such variables.
