If youve gone mad for matcha, youre not alone.
The green tea beverage has blown up recently, with new brands and even cafes solely dedicated to the drink popping up and taking off.
Matcha is simply a powdered form of the Camellia Sinensis plant, better known as the green tea which comes in a typical tea bag. Matcha also contains more caffeine, since it is the powdered concentrated form, and also has more antioxidants than its leafy brother.
You may have also seen the phrase ceremonial grade floating around your cup of matcha or overheard at tea shops. This means highest grade of matcha powder, giving the best bright green coloring, tiny bubbles and highest concentration of nutrients. This matcha is able to be used in traditional Japanese tea ceremonies and is best to drink straight, whereas culinary grade matcha is best for cooking, baking and adding to your favorite green smoothies.

The Greener The Better
When it comes to teas, the color will tell you the quality of the product. Top-quality ceremonial grade matcha should have a vibrant green color. But, cooking matcha does not. Cooking matcha comes from a variety of leaves blended for culinary purposes. Cooking matcha adds rich flavor and aroma to many regional cuisines.

Why I Drink Daily Matcha
If you’re a regular reader, you probably already know that I’m not a coffee drinker and never have been. I did not undergo a profound switch from coffee to matcha, like I know many others have. As someone prone to chronic migraines, I’ve been pretty cautious around coffee. In college, I’d drink the occasional “dirty chai” to get me through deadlines, but I never liked the feeling of coming down after the initial high that always seemed to trigger a migraine.
When I found matcha lattes, it was a game-changer. Especially after becoming a new mom with a suddenly much earlier alarm clock than my prior grad school life required. Matcha provides just the morning boost I need as a non-coffee drinker. It gives me a morning high, without the jolt, buzz, or crash you get with coffee – without the accompanying headache or caffeine withdrawals.
My husband Lucas describes coffee as a steep bell curve. Or maybe more like a cliff, where you quickly get a morning buzz, but then, without more, you hit a wall and quickly come down. I think of matcha like a radical graph increase that levels off and keeps me going throughout the day. And, much like coffee, I have trouble starting my day early without it.
Without missing a beat, she quipped back, “matcha.” She gets me.
What Is Matcha Exactly

Traditional matcha is a neon-green powder made from tencha, a specific style of Japanese green tea in which the leaf is partially shaded for three weeks before harvest. This shading alters the tea plants chemical content as it struggles for light, bringing out intense sweetness and umami.
Since whole tea leaves in cold storage will keep longer than powdered tea, it is kept refrigerated, as tencha, until its ready to be packaged. Typically, only when an order is placed for matcha does a processor begin the arduous work of removing the tenchas stems and veins, and then grinding the tender leaf into a fine powder. A hand-carved granite wheel is used, at a relatively slow speed, so as to not heat the leaves and diminish their flavor. The matcha is then packaged, nitrogen-flushed to remove any oxygen, and sealed.
Today, matcha is the only tea that we consume in powdered form. But this was not always the case: in Chinas Song Dynasty , all tea was hand-ground and whipped into a creamy, frothy drink. During the subsequent Ming Dynasty, in 1391, the Hongwu emperor prohibited the practice of grinding tea and promoted the brewing style of whole-leaf infusion we now all knowbut not before powdered, whipped tea had migrated to Japan. Here, matcha was refined and blossomed into chanoyu, or the way of tea. This intricate, choreographed practice of drinking matcha has its roots in Zen Buddhism, and was codified in Japan about five hundred years ago.

Matcha Green Tea Benefits
Recommended Read: Is Coffee Beneficial To A Vegan Diet?
Matcha, like other greens tea, contains a class of antioxidants called catechins, and matcha is particularly high in EGCG , which researchers believe to have anti-cancer effects.
There are also numerous studies that associate green tea consumption with a variety of health benefits, including the prevention of heart disease, type 2 diabetes, and cancer, the enhancement of brains function and mood, and it may also play a role in weight loss, as it may accelerate metabolism and cause you to lose more calories.
However, it is important to note that these studies are not clinical trials that define a cause and effect.
Most are largely population-based studies, where researchers look at groups of people that consume green tea and compare their health outcomes to groups of people that dont drink it. There is an association, but its not possible to prove causality with these studies because there are other variables in play.
Nevertheless, the findings are promising, and a relationship between tea-consumption and positive health outcomes does seem to exist on some level.

Texture Of Matcha Green Tea Powder = Smooth And Silky
The best matcha tea powder will be always stone milled, so good quality matcha tea needs to be smooth and silky when you rub it between your fingers. You can do the paper test grabbing a pinch of matcha tea and smearing it onto a piece of white paper if it leaves a long, clean line that means it is good quality. Rocky versions wont dissolve as good and are an indication of bad quality matcha tea. This is also the result of being leaves that are lower in the plant, and therefore thicker.
Why does the texture matter? You want a good quality matcha that is smooth and dissolves quickly, so you do not have lumps on your tea.

Secondly, check the texture of the powder. If its clumpy or feels gritty, its likely that the powder has gone bad.
Finally, give the powder a taste test. If it tastes bitter or has an off flavor, its likely that the powder has gone bad.
Are Matcha Lattes At Home Healthier Than Buying Lattes At A Cafe

There is no clear answer when it comes to whether or not matcha lattes at home are healthier than buying them at a cafe. It depends on a number of factors, including the ingredients that are used in each latte.
Some of the benefits of drinking matcha lattes include antioxidants, energy, and focus. However, some of the ingredients in store-bought lattes may not be as healthy as those used in homemade versions. For example, artificial sweeteners and milk additives can be unhealthy.

How To Shop For Matcha
“The first question I always ask anyone that comes into our shop to buy matcha is what they’re going to use it for,” says Jue. Are they going to bake with it? Make a latte? Drink it ceremonial-style? This will determine how I recommend what product they buy. Certain styles of matcha are better suited for specific use cases depending on the flavor profile and price point of the product. More expensive matcha, for instance, which might be the move if you’re planning to drink it straight, isn’t the best option for milk-based drinks or baking if those are your primary uses, you can afford to step down in cost.
Bitterness and earthiness correlate with price point,” says Jue the less bitter or earthy, the more expensive the tea. But for matcha lattes, bitterness is required to stand up to the creamy richness of the milk, so a slightly lower grade product is your better bet. That same flavor profile is prized in matcha baking as well, where the bitterness can shine through as a potent flavor in cheesecake or ice cream. Also, you’re usually using a lot more, which can get very expensive very quickly. Jue recommends sticking to culinary-grade matcha here, which imparts the flavor you need at a lower price.
Finally, buy matcha that comes in an opaque, airtight tin. This will keep out light and oxygen to prolong your tea’s lifeand ultimately make it easier to scoop.

How To Cook And Bake With Matcha
Once youve gotten a handle on the matcha essentials, youll likely want to experiment. Here are some tips to making the most of matcha in food, drinks, and desserts.
In cookies and cakes: Add 1 to 4 tablespoons of matcha depending on batch size and desired intensity. Matcha acts as a dry ingredient in baked goods, so for every tablespoon of matcha you add, reduce the flour by the same amount. This matcha shortbread recipe is full of green tea flavor and not too sweet.
In ice cream and frozen desserts: As with baked goods, use 1 to 4 tablespoons depending on your target strength. Matcha will thicken the viscosity of ice cream bases and milk ice for Taiwanese-style shaved ice. Follow this matcha-ginger ice cream recipe for a basic formula.
In cooking: Matchas grassy-umami flavor works delightfully in a finishing salt. Combine 1 part matcha with 4 parts coarse sea salt, mix well, and sprinkle on toast with abandon.
In cocktails: Matcha mixes seamlessly into shaken cocktails, adding deep flavor and a creamy heft. Try this cocktail recipe from our tea book.
