How To Make Homemade Evaporated Milk

Since this recipe only makes two drinks you wont need very much evaporated milk. You can store the remaining homemade milk in an air-tight container in the refrigerator for your next batch of tea.

  • Place 1 cup of whole milk into a small saucepan and heat over medium heat.
  • Bring the milk to a simmer, stirring occasionally, and then reduce the heat to low. Continue to simmer the milk for 20 to 25 minutes until its reduced by about half.

    Newly open on Robson Street is Primes Thai Tea, a Chinese brand which specializes in Thai-style milk teas. The brand was founded in 2015 and originated from Jianmen, Guangdong. Primes Thai Tea is one of the largest beverage brands in China with over 500 stores.

    Primes Thai Tea opened up a location in White Rock last year and this new outpost at 1194 Robson Street is their second.

    Whats In Thai Iced Tea

    In general, Thai iced tea is made up of a tea mix thats steeped in hot water, then mixed traditionally with sweetened condensed milk and topped with crushed ice. However, you can also use regular white sugar or make your own simple syrup and add a milk of your choosing.

    The Thai iced tea mix packets themselves have very limited labels from my experience. All of my test packets list some sort of tea , maybe sugar, and always some sort of food coloring.

    If you plan on making large batches of this tea, which I highly recommend, then youll want to store the tea in glass jars with lids or in a pitcher. Keeping them in the single-serve-sized jars makes them easy to grab and go. The tea will keep for up to 7 days stored in the refrigerator.

    It is entirely your choice if you would like to add the sweetened milk mixture to your tea during storage or keep it stored separately. The milk mixture only keeps for about 4 to 5 days if you add in whole milk or evaporated milk. Keep this separate and the sweetened condensed milk will last for up to 2 weeks in the refrigerator.

    How Is Thai Tea Different From Plain Black Tea

    Unlike regular black tea,Thai Tea is infused with star anise and cloves and sweetened with sugar or sweetened condensed milk.

    Thai tea can be made in two ways:

  • From a pre-made tea mix which includes the coloring and the spices mixed in with the black tea. I used Pantai tea mix, but Ive also heard great things about Number One Brand tea mix.
  • Or from simple, plain, strong black tea. Either loose leaf tea or tea bags both work.
  • The recipe I am sharing here today is using a pre-made tea mix. After all, Im American and this is what I know best.

    But its pretty darn good. And it brings back ALL the memories of scooting from one side of Koh Tao to the other on the back of a teeny tiny little motorbikewithout a helmet.

    Tips For Making The Best Thai Iced Tea

    • Lots of sugar. Thai iced tea is super sweet, just like Southern sweet tea, and you can use whichever sweetener you prefer. Adding quite a bit of sugar may seem odd, but this is key for making the best-tasting Thai tea.
    • Sweetened Condensed Milk. This super thick milk mixture does add even more sweetness but also brings an extra-smooth creaminess to the beverage. It is also responsible for creating the beautiful ombre look of deep orange to a creamier colored orange.
    • Whole Spices. Since this recipe doesnt use the Thai tea mix youll need to add some additional spices. These spices will be in their whole form to achieve that delicious flavor. I would even suggest using these spices in the tea mix too though. You need a cinnamon stick, star anise, whole cardamom, ground turmeric, and a piece of vanilla bean although the last is optional.

    How To Make Thai Tea At Home

    Brewing the tea mix is as easy as making any other tea at home. In a pot over the stove, add 4 cups of water on medium-high heat. Once the water begins to boil, add the tea mix and stir the tea mix thoroughly.

    Allow the tea to boil for 3 minutes. Carefully watch the boiling tea to prevent the water from over boiling and potentially ruining your stove with yellow food dye. After 3 minutes, remove the pot off the heat and let the mixture cool for 20 minutes.

    After 20 minutes, strain the tea over a mesh strainer and a bowl, or a fancy tea sock. Make sure the tea is nice and clean of any tea leaves. Since Thai tea is best served cold, I like to make this recipe ahead of time and leave it to chill in the refrigerator for 2 hours.

    To assemble, fill a glass with lots of ice and add half of the cooled Thai tea into a glass. Mix in your preferred sweetener . Now sit and watch the amazing-ness of the orange ombre about to take effect. This is my favorite part!

    The ice will help dilute some of the sweetness so we want a strong and sweet base. Top it off with more ice if you prefer. Enjoy!

But rather, Im more interested on how easily it was made and why we didnt make it more often. The version we have is as authentic as what most Thai restaurants in America are making.
