Bellini Peach Raspberry Iced Tea
My favorite thing to get every time I go to Olive Garden is their bellini peach raspberry iced tea. Something about the really simple combination of flavors is so perfect with just the right amount of sweetness to it. When I was their last time, I realized that I had all the ingredients to make it in my pantry already from when I made raspberry peach bubble tea.
This recipe made with just 3 simple ingredients black tea, raspberry syrup, and peach syrup. I used homemade simple syrups but you can totally buy both flavors from the store too.
Something that I love about this recipe is that it is super easy to scale up or down, depending on how many people you are serving. The recipe makes enough for about 3-4 people but you can easily double or triple it for a party, just make sure to taste test it to make sure that the tea to syrup ratio tastes right. If it doesnt, feel free to add more to the iced tea.
To keep the drink cool, I sometimes like to free raspberries and peaches and use them like ice cubes in the drink. It helps keep from add extra ice cubes which can lead to the tea getting watered down.
How To Make Peach Iced Tea
In a high-speed blender jar, add sliced peaches, sugar, lemon juice and 1 cup water. Blend everything together until smooth. Tip : A good high-speed blender just like the one I have used here will give nice and smooth puréed peach for syrup/nectar.
Transfer the prepared peach mixture into a small sauce pan, heat and bring it to a boil. Once the juice boils, simmer for 30 seconds and then take it off the heat, our homemade peach syrup is ready.
Transfer the syrup in a pitcher. NOTE : As my peach syrup was smooth and free from any pulp or peel bits, I have skipped the step of straining it. If your mixture isn’t smooth, then, strain the nectar using a fine mesh strainer.
In a medium sauce pan, add the remaining water and bring it to a point when it starts to bubble.
Add tea leaves and bring it to a boil, simmer for 2 minutes only. NOTE: Simmering tea beyond 2 minutes time can make it bitter. However, if you want it to be stronger, add more tea and brew for another 1-2 minutes.
Once brewed, switch off the heat and let it rest for 5-6 minutes. Strain out the tea leaves into the pitcher with syrup, stir and refrigerate.
Put few ice cubes along with thin peach slices and few fresh mint leaves into serving glasses, stir and pour the iced tea mixture and serve!

A peach-infused sugar syrup is what gives this tea its subtle peach flavor, basically water and sugar simmered with fresh peaches. Its very simple to make ahead of time the syrup keeps remarkably well in the refrigerator for up to 2 weeks.
The hint of peach is just enough fruity flavor to grab your attention without overwhelming the true nature, both bitter and sweet, of the tea itself.
I tested both hot brew and cold brew methods to make iced tea, and the cold brew was clearly the winner . The cold brew method is clear and crisp, the robust black tea flavor free of any excessive and undesirable bitterness.
The only downside to the cold brew method is it requires advanced planning: ideally you should let your iced tea steep for about 12 hours
You can serve the tea and syrup separately, letting each person customize their tea to their preferred sweetness. Or, for practicality reasons with larger groups, pre-mix the syrup into the pitcher of tea and serve it already sweetened.
I used my favorite basic black tea, Taylors Yorkshire Gold, but you can use whatever black tea you like best .
