The boba pearls are traditionally black or dark brown but can also be found in rainbow colors, and even green matcha boba!

Milk Tea typically consists of 4 main ingredients- tea, milk, sugar, and tapioca pearls but can be customized in many many ways including some with or without ice, or even blended into a smoothie consistency. The possibilities are endless!

    How Is Boba Formed

Boba is made from a new way of cooking called molecular gastronomy which investigates how certain ingredients transform through a chemical reaction when cooking.

This unique type of boba pearls is goes through a cooking process called reverse spherification.

It is a technique where you take your fruit flavorings and mix it with flavorless calcium lactate or calcium chloride.

Then sodium alginate and water are prepared. As the flavorful liquids are dropped into the sodium alginate the calcium solution known as calcium salt reacts and encapsulates the liquid in a gel.

If you dont have sodium alginate you can use vegetable oil and combine your juices on medium heat.

This is what forms the thin gel-like exterior. If you have a small sphere ball it can make it more difficult to thicken in the sodium alginate.

The inside of these pearls is liquid flavor waiting to explode in your mouth!

You can find popping boba pearls at most Asian markets or online. You can also make them at home with this recipe.
