Heres the reason why! Milk proteins interfere with the activity of tea compounds like theaflavin, thearubigins, and catechins in your body.

How To Make It

This is such an easy recipe I cant really think of many things that can go wrong: you just need a strong black tea, brown sugar, milk and heavy cream if desired. Ice to make it extra chilled.

Brew black tea. Boil the water. Pour the boiling water over the tea or tea bags, and steep for 5 minutes. Let it cool for about 10 minutes.

Add brown sugar. Remove the tea bags/tea leaves and stir in the brown sugar. You can use dark brown sugar or light brown sugar.

Add milk and heavy cream. If using dairy, prefer using whole milk for this recipe. Its smoother and makes the black tea even more delicious, as it hides its bitter notes along with the brown sugar. If using plant milk, almond and cashew milk are great matches for this recipe. Skip the heavy cream if making a vegan/dairy-free version.

Whip remaining heavy cream. Its the perfect topping for your milk tea. Stop whipping it before you get peaks: you dont want it to sit on top of your tea, you want it to blend with your delicious black tea milk.

Tips To Make The Best Masala Chai

  • Fresh ginger: Fresh ginger contains an enzyme, called zingipain. It can break down the protein in the milk and leads to curdling of milk. So always boil the water with the spices, and ginger, first before adding the milk.
  • Tea Bags: If you are using tea bags to make masala chai, I highly recommend adding an extra tea bag as they don’t have much flavor compared to loose black tea.
  • Simmer: Simmer the tea for a few extra minutes after adding milk if your chai has not reached the desired consistency and color you prefer. You can also add some extra tea powder or bag if its not strong enough.
  • Milk: Feel free to increase or decrease the quantity of the milk as per your liking.
  • Whole spices: You can add whole spices in to the tea as-is for ease and boil to light flavor of the spices. For a slightly stronger flavor, roughly crush the spices using a mortar & pestle. For even sharper, stronger flavor, grind them in a spice grinder to make a chai masala powder.
  • Scaling: You can double or triple the recipe.

Add 3 Teaspoons Of Milk Pwder

Add three teaspoons of milk powder and one tablespoon of normal water into a large cup. Mix well until you form a fine paste. This helps to get rid of any milk powder granules or clumps.

Why Making a paste will avoid loose milk powder swirling at the bottom of the cup. If youre in a hurry, then you can skip this step.
