Yall know we love our classic Southern sweet tea. But we also love to try new things with our tea, which is why weve enlisted the help of green tea expert Kei Nishida, who is teaching us to make sweet tea with a little Japanese flair.
Ive lived in the US for over 20 years now. It almost feels like a lifetime. But I still remember the early days when I just moved here from Japan. I was a young high school student looking for ways to make it in the new world. While the transition to the states wasnt easy, I fairly quickly adapted to the Western way of living.
I did miss Japan, and I especially missed a few things I took for granted while living at home. Green tea and tea ceremonies were on the top of this list. I knew that itll be hard to continue with my tea drinking rituals but I wasnt going to give up. I started looking for ways to incorporate green tea into my everyday life. And it wasnt long before it hit me why not mix my favorite types of tea with American recipes?
It did take some time to fine-tune my experiments, and lets just say that some recipes proved to be a bit much. Green tea doesnt mix well with some foods and drinks. But when it does, it is revelatory. And what better way to get your dose of antioxidant-filled tea than by adding to to food and drinks youre already consuming?
Again, avoid tea bags. Steep loose leaf tea for 1 to 3 minutes at a temperature of 180 to 185 degrees. If you do these two things correctly youre good to continue.
Why You Shouldnt Reuse Tea From The Day Before
Most catechins, a type of antioxidants present in green tea, come out on the first steep. These catechins serve as a natural antibacterial protection, so after the first steeping session, the tea is more susceptible to get some harmful microorganisms. The longer time goes, the more susceptible thats why you shouldnt re-steep tea hours after the first steep.
Adding Sweet Flavor And Other Tastes And Aromas
Pour the tea into a pyrex, porcelain, or ceramic jug or pitcher, if youre making more than one serve of green tea at once. Add granulated sugar or other sweetener to enhance the otherwise bitter taste. Some options for sweetening include cane sugar, raw sugar, honey, maple syrup, rice syrup, and stevia.
Give it a good stir before serving. Then add other ingredients, to personal taste, such as a couple of mint leaves or lemon slices, as desired!
Chill it in the refrigerator.
Some people prefer to refrigerate their mixture overnight. In this case, Id wait till just before serving to add a slice of lemon, sprig of mint, or other enhancements.

Cold brewing can be a lengthy process. But, if you’re impatient to drink your tea, you can just brew a quick cup of hot green tea and then cool it with ice. This method works equally well with loose-leaf tea and tea bags.One thing to keep in mind, however, is that the ice will water down the tea, so, you may want to make your tea stronger than you normally would. Try doubling the number of tea leaves you use or using two tea bags instead of one.

How To Make Cold Brew Green Tea

Why does cold brew green tea taste sweeter and less bitter?
The solubility of the different compounds in the tea is the reason for this. The elements responsible for the sweetness namely, the Amino Acids are more soluble in cold water whilst the extremely bitter antioxidant Catechins and Caffeine are less so. That is also the reason why using really hot water straight from a kettle results in a really bitter cup of tea.
What green tea are most suited for cold brew?
Fukamushi Sencha which is deep-steamed is most probably the best tea to use as the leaf structure has already been broken down and requires only a really short steep time to make an excellent brew.

Put The Jar In The Refrigerator For At Least 8 Hours
Now its time to place the tea in the refrigerator. Ideally, cold brew tea should steep for 8-12 hours and no more than 24 hours. Personally, I brew it about 12 hours overnight.
Heres a little known tip if youre pinched for time.
The tea experts at Whittard of Chelsea recommend using a flash heat method to wake the tea up before adding cold water. This is accomplished by covering the leaves with 2 inches of boiling or near-boiling water. Then it is topped off with cold water and brewed at least 4-6 hours.
On another note, Whittard also explains that hot water kills natural bacteria in unprocessed teas.

Is It Ok To Reheat Green Tea
If you forgot to have your tea for a maximum of 10 to 15 minutes, it is safe to drink. The food poisoning bacteria grow in brewed teas that are exposed to heat between 41 to 140 degrees Fahrenheit. The presence of milk results in faster accumulation of bacteria, and only reheating the tea will not kill them.

How Much Caffeine Is In Cold Brewed Green Tea
Its difficult to give exact figures because each type of green tea differs and the caffeine content varies depending on how its prepared and the time spent steeping. But you can say that, on average, 100 ml of brewed green tea has about 15 grams . However, if you prepare it with cold or room temperature water instead, it will only have around 5 grams caffeine per every 100 ml: one-third as less caffeine as hot brewed tea.
Sweetened Vs Unsweetened Green Tea
Again, this is all about your own personal preferences, so we thought it would be a good idea to feature two recipes for iced green tea: one with added sweetener and another without.
This way, there is something for everybody. Also, its important to note that these are just guidelines, and you should feel free to modify these recipes to suit your own tastes. However, you can use fresh mint with both of these, which we strongly recommend!
