How To The Traditional Way
There are two methods for traditionally preparing Matcha Green Tea Koicha and Usucha . Koicha is sweeter and mellower, requiring very little water to mix and results in a thicker drink than Usucha. Koicha is the method for preparing Matcha for Japanese tea ceremonies. Usucha has more water than Koicha and so is easier to froth. Both preparations only have 2 ingredients- Shade grown Tea powder plus hot water .
Leaves For Matcha Are Supple Very Fragile
All new growth is soft and supple, but shade-grown tea is especially soft.
The topmost parts of the tea plant are then harvested. Theyre almost always hand picked, since you need a good eye to pluck the two leaves necessary for Matcha.
This, combined with the relatively low yield of the tea plant results in many plants having to be picked for just a few leaves each harvest. In comparison with plants being almost fully picked when regular tea is made.
Not all leave are good enough for Matcha, and this means that some leaves are plucked but not used for Matcha. Instead, they end up as another premium tea, and Ill get to that in a bit.
Types Of Matcha Green Tea
Depending on the preparation method, there are two types of matcha: the thinner Usucha and the thicker Koicha.
Koicha is the green tea of choice in Japanese tea ceremonies and special tea parties. It is much sweeter and more full-bodied than Usucha.
For a beginner and everyday use, I recommend making Usucha.

Which Matcha Type Should You Use For Making Latte
The type of matcha you choose is more important for making traditional tea, than for making a latte. There are different grading system for matcha powder, and the two main categories include ceremonial grade and latte and culinary grade matcha. The best type for making a non-traditional matcha drink is a latte grade matcha, but you can use culinary grade matcha and ceremonial grade matcha too.
If you have a very high quality expensive ceremonial grade matcha, we recommend drinking it without milk. Basically, the difference between culinary and latte and culinary grade is that the first one will still give a delicious taste while blended with milk, and the second one is more suitable for cooking, should be used in larger amount to get the best flavor and color and is often less expensive. You may be able to use latte grade for drinking matcha in the traditional way, but you wont get as enjoyable drink if you use a cooking grade powder.

A thermometer will help stop you from brewing your Matcha too hot.

Boil water and let cool to 175F/80C
2. Sift 2-4 grams of matcha powder into your bowl or mug.
3. Add you hot water and whisk!
The goal is to eliminate any clumps of matcha powder.
While also aerating the tea and forming small bubbles on top of the tea.
It usually takes about 20 seconds to whip up a good froth.
If you notice that your matcha isnt doing that it might be because youre adding too much water.
Remember the less water you use the foamier it will get.

So How Is Matcha Made
