One of my favorite ways to serve chai tea is to make a chai latte.
To keep things on the dairy free or paleo side, you can infuse your chai tea directly into homemade coconut milk or almond milk before frothing it all. Yall Im not gonna lie, I would pick chai over a coffee any day. Not that I drink that much coffee in the first place, but still. For me, chai has always had a special place in my heart. Its always been much more than just a spicy drink option at the coffee shop, but a way of inviting people into your home and spending time with those you care about. Whenever my parents friends would come over to the house, even just to drop something off for less than two minutes, one of the first questions was always, Would you like a cup of chai? Bringing out a tray of chai with some biscuits was a way of forging connections and building relationships, finding out what was going on in someones life and taking a break from the fast-paced lives everyone is dealing with.
Looking back now, I kind of get all wispy and nostalgic about those moments. So since I dont live at home anymore where a cup of chai was just one ask away, I had to start finding my own formula .

History Of Masala Chai
Masala chai has a history that goes back thousands of years in India. It’s a staple healthy beverage in Ayurveda and traditional Chinese medicine. Since its beginnings, it has always been made with a variety of spices. It has been served hot and cold, with and without tea leaves, but always with spices.
The version that became the caffeinated beverage that we know and love today was introduced in India when the British set up tea farms in Assam in the 1900s. But tea leaves were still too expensive for regular Indians. So, the vendors added spices, milk, and sugar to maintain a flavorful beverage while keeping down costs.
When tea became more affordable in the 1960s, masala chai became more popular. Its now enjoyed all over the world, in part because South Asian migrant workers introducing it to places they moved to for work.
In America, masala chai has just morphed into just “chai,” which is a misnomer. Masala chai means “spiced tea” in Hindi, and chai just means tea. So, saying “chai tea” is like saying “tea tea.”

What Is Chai Tea
The weak tea that North Americans typically drink has the colour of dirty dishwater, almost no flavour, and no need for sugar . It is nothing close to the version drunk by millions of Indians.
Indian tea, also known as chai, is rich and milky, deeply coloured, steaming hot, and boldly flavourful with a definite need for sugar to offset the toasty bitterness.
The word chai just means tea. Chai = tea.
If you ask for chai tea in India, youre asking for tea tea and your dorky adorableness will get laughed at a little bit.
Masala chai, on the other hand, is what youre probably aiming for its the spiced version. Masala = spices.
Despite what Starbucks would have you believe, real chai doesnt start with a syrup and its not super heavily spiced. If you visit India, youll see chai-wallas on every corner, calling out chai! chai! chai! and pouring steaming tea from a height , allowing it to cool a bit as it streams into little metal cups.
Whenever my husbands parents visit, his mom makes me a steaming cup of her most delicious homemade Indian chai every morning. I start looking forward to it before I even go to bed at night. It is the tastiest tea you have ever tasted and I could drink a hundred cups a day.
Granted, she really likes my tea, too, so I have a theory that it just tastes better when someone else makes it for you, with love.
The Primary Ingredients In Indian Chai Are
- Tea leaves black tea leaves or loose leaf tea are used to make chai. My preferred brands are Tetley and Society Tea. There are many who love the Wagh Bakri brand as well. Any black tea bags will work too. If you are using tea bags, I would cut them open and use the tea in it, as it gets out more of the tea flavor that is needed to go with milk.
- Milk I use whole milk for my chai and my water to milk ratio is higher because of that. If you are using 2% milk, I would add more milk and less water or else your chai may end up watery.
- Sugar regular granulated sugar is commonly used to sweeten chai. You can use brown sugar or jaggery as well.

Oat And Vegetable Chilla: A Healthy Indian Pancake
Count out the spices and place them in a large pot. Add your water and bring to a boil. Cover and allow to simmer 1520 minutes. Using a wooden spoon, crush the cardamom pods against the side of the pan to release the little seeds inside the pods. You will notice the spices are starting to get soft. As they are allowed to absorb the liquid, they will get even softer. Return the lid and allow the spices to continue infusing in the hot liquid.
Bring the liquid back up to a boil and add your teabags. Any black tea will do. The kids and I love to experiment with different exotic blends, like black currant or pomegranate. We always have Lipton on hand as my mother drinks it when she visits. But definitely mix it up.
Remove from heat and cover. Let stand fifteen more minutes or so. You want to extract as much flavor as possible from those tea bags. The whole house should smell just divine at this point, and you might have some lurkers waiting on what’s in the pot…this is how you know you’re doing it right.
Strain the herbs from the liquid. Always a pain. There is no easy way to get around this step. I use a 1/2 gal canning jar, a canning helper, and a strainer. It’s a contraption I made up one day when I was lacking extra hands in the kitchen. Using a wooden spoon, press the herbs to release as much of the absorbed liquid as you can. Return all the liquid to your pot and add the sugar or honey. Briefly stir to dissolve then add your milk.
