Add Warm Water & Form A Paste
With your matcha powder ready to go, its now time to fill your matcha bowl with 2 oz of warm water from a kettle and use a traditional bamboo whisk to whisk your matcha into a smooth, clump-free paste.
Water temperature is one of the most important variables in steeping a consistently bright and tasty cup of matcha.Keep it to a warm 75-85°C so as to not burn your matcha powder and give it a bitter taste. Cooler water temp also means your matcha will froth up to that eye-catching jade colour. Use cooler temp 75°C for traditional matcha and for flavoured matcha.
Dont have a thermometer?Let your boiled kettle sit for 7-10 minutes before using.

Like anything else, if you want to enjoy the taste of a cold brew matcha, I suggest using a matcha that you already like. I prefer using ceremonial grade when making cold brew matcha and sometimes I will use culinary grade if Im making a cold brew matcha latte. It all depends on your taste preferences! The Most Important Tool
The most important tool used in making tea is of course the kyusu or small teapot with a handle. You can purchase these tea pots at tea shops or in large supermarkets in Japan.
If you don’t have access to one of these particular small tea pots, the tea pots used to brew black tea can also be used.
When making tea directly from the leaves, another important tool is the chakoshi used in order to prevent the leaves from entering the cups. As you can see in the photo, there is a mesh over the spout opening in the kysu, which means a second tea strainer is not necessary. If you are using a regular tea pot however, you will definitely want something to strain out the leaves.
Adjusting Water Temperature For Fine Brew
You can easily adjust water temperature by the following procedures
- If you pour boiling water directly into teapot , the water temperature is 194F .
- If you pour boiling water into teacup or water cooler once and then pour into teapot , the water temperature is 176F , which is the perfect temperature for brewing Sencha.
- If you pour into teacup or water cooler two times before pouring into Kyusu, the water temperature is 158F , which is the perfect temperature for brewing Gyokuro. If you pour three times, the water temperature is 140F , which is also the perfect temperature for brewing Gyokuro.
